For The Chicken

  • 1 1/2 tablespoons of olive oil
  • 2 tablespoons of minced, fresh cilantro
  • 2 1/2 tablespoons of fresh lime juice
  • 4 6 oz. skinless, boneless chicken breast halves
  • 1/4 teaspoon of salt
  • Cooking spray

For The Salsa

  • 2 tablespoons of finely chopped onion
  • 2 teaspoons of fresh lime juice
  • 1/4 teaspoon of salt
  • 1 cup of chopped plum tomatoes
  • 1/8 teaspoon of freshly ground black pepper
  • 1 peeled and diced avocado

To begin, we will prepare the chicken. In a large mixing bowl, combine the oil, cilantro, and lime juice. Add the chicken and coat. Let marinate at room temperature for three minutes. Remove the chicken and discard the marinade. Sprinkle salt over the chicken.

Coat a grill pan with cooking spray and heat on medium-high. Cook the chicken in the pan until done (about six minutes per side).

Meanwhile, make the salsa by combining the onion, lime juice, and salt in a medium bowl. Toss with the tomatoes and season with pepper. Add in the avocado and stir to combine. Pour salsa over the prepared chicken and serve.
